Recipes I remember off the top of my head

Based on my post to That List - but I don't know all five of them off the top of my head.


Chicken and Rice - AKA the world's easiest dinner

1-2 lb chicken, cubed
1 or 2 cups rice
2 or 4 cups water
2 or 4 cubes boullion
2 Tbsp. olive oil
Herbs to taste (I usually add garlic, italian herbs, and red pepper)
Vegetables of your choice, if you want them

Mix all ingredients in a large pot. Cover. Cook in a 350° oven for 1 hour (1.5 hours if using larger quantites). Serve.



Whole Wheat Batter Bread

6 cups Whole Wheat Flour
3 to 3.5 cups Hot water (~120°)
2 packages yeast or equivalent
1/4 cup sugar
1 tsp salt

Preheat oven to 400°. Mix ingredients. Pour into two greased loaf pans, filling the loaf pans no more than 2/3 full. Let rise for 45 minutes to an hour (less time if using fast-rising yeast at higher water temps), but no more than 1" above the lip of the loaf pan. Bake in 400° oven for 20 minutes, reduce heat to 350° for 40 mins. Bread is done when thumping top of loaf with index finger gives a hollow sound. Serve hot, with lots of butter or butter-substitute.

This bread recipe is easily modified to add other ingredients. If substituting flours, reduce yeast accordingly (for all-white flour, for example [which I don't recommend], use only 1 package yeast).
